Because I'm trying to control my son's eczema by eliminating certain foods from his diet that might trigger flare ups, I decided to cook some quinoa pancakes for him today. There are so many recipes online but I stuck to a simple one. Ingredients: 1 cup of quinoa flour (I use Bob's Red Mill Organic Quinoa Flour) 1 tsp baking powder 1 tsp cinnamon powder 2 cups rice milk (you can use almond milk or any non-dairy milk) 1 tbsp maple syrup 1 tsp vanilla extract (optional) 1 tbsp Flaxseed Meal dissolved in 3 tbsp water (replacement for egg) any toppings (blueberries, cacao nibs, bananas, or any other fruit) coconut oil for frying Just mix all the dry ingredients together well and then add the wet ingredients to make a batter. Then dole out your batter in a pan and spread gently into circles. Cook until little bubbles form and then flip it and cook for another minute or two. That's it! He loved the pancakes. He ate like 4 of them in one sitting. His dad loved them too. If you're looking for a healthy alternative to regular pancakes, I think this recipe is worth a try. I will definitely be making these again.
